Foodie Friday- Greek Salad


We have been enjoying some different salad recipes. I personally LOVE Greek salad. I love that you can add or subtract different veggies, but as long as you have the basic dressing, olives, feta, and tomato- it always tastes yummy.

Basic Greek Salad:

- 1 head Romaine lettuce chopped
-1 /2 cup of green and red olives
-1/2 cup feta
-handful of your choice of tomato (I used grape tomato in this one)
And then you can add what ever else you like. For this salad I used marinated artichoke hearts, roasted tomato and zucchini, and pepperoncinis.


Dressing:

-1/2 tsp Dijon mustard
-1/2 tsp salt
-1/3 cup EVOO
- 2 cloves minced garlic
-3 tbs red wine vinegar
-1 tsp dried oregano

Whisk together and I like to let it sit or refrigerate for ten minutes. Then you can drizzle it over the salad. This is a basic dressing. There are also lots of other good dressing recipes out there. Also, sometime when in a pinch for time I use store bought Italian dressing. But then can you really call it a Greek salad?

Yum! I love greek salads also. But haven't made this type of dressing with it. Great salad photo as well!
