
- 1 1/2 c flour
- 1/4 c quick oats
- 1 c granola
- 1 c brown sugar
- 1 tsp baking soda
- 1 tsp cinnamon (I add more)
- 1/4 tsp nutmeg
- 2 c zucchini grated (or diced apples, shred carrots, pumpkin, flax seed- you name it)
- 2 eggs
- 1 tsp vanilla
- 1/2 c softened butter
- 1/2 c yogurt any flavor ( I usually add at least a cup, makes it very moist)
Optional toppings, but tastes just as good without: granola, butter, brown sugar, cinnamon sugar
Preheat oven to 375*. Mix first 7 ingredients. Add butter, yogurt, vanilla, & eggs. Blend well. Add zucchini and stir. Pour ingredients in a greased or lined muffin pans. Bake 10-25 min or until golden brown on top.
We served ours with apple smoked bacon, oranges, and a decaf cup of Joe for me. YUM!
I wish I could say the rest of the day was just as smooth. But, that would be too boring. As a side note; Did you know stress and pregnancy can cause a nasty nose bleed? Enjoy your meal!
