Sunday Breakfast

The kids and I had decided that today was going to be a good day. So, nothings better than to start off with a yummy breakfast. Here's my (copied from someone, dunno her name) recipe for the best home made muffins.

  1. 1 1/2 c flour
  2. 1/4 c quick oats
  3. 1 c granola
  4. 1 c brown sugar
  5. 1 tsp baking soda
  6. 1 tsp cinnamon (I add more)
  7. 1/4 tsp nutmeg
  8. 2 c zucchini grated (or diced apples, shred carrots, pumpkin, flax seed- you name it)
  9. 2 eggs
  10. 1 tsp vanilla
  11. 1/2 c softened butter
  12. 1/2 c yogurt any flavor ( I usually add at least a cup, makes it very moist)

Optional toppings, but tastes just as good without: granola, butter, brown sugar, cinnamon sugar

Preheat oven to 375*. Mix first 7 ingredients. Add butter, yogurt, vanilla, & eggs. Blend well. Add zucchini and stir. Pour ingredients in a greased or lined muffin pans. Bake 10-25 min or until golden brown on top.

We served ours with apple smoked bacon, oranges, and a decaf cup of Joe for me. YUM!

I wish I could say the rest of the day was just as smooth. But, that would be too boring. As a side note; Did you know stress and pregnancy can cause a nasty nose bleed? Enjoy your meal!
